Cornell Cookbook #22: Easiest Fanciest Side Individual Yorkshire Pudding

Ingredients

4 large eggs

1 cup + 2 teaspoons flour

3/4 cup 2% milk OR 3/4 cup whole milk + 1 tablespoon water

1/2 teaspoon salt

 

Fat for cooking: beef drippings, bacon fat, duck fat, lard, shortening, or vegetable oil

Muffin tray


Instructions

Prepare the batter up to 3 days before cooking, a longer resting time makes for a better rise in the oven, and refrigerate.

About 30 minutes before cooking, remove from fridge.

Preheat oven to 450 degrees.

Add a generous teaspoon of fat into each space in the muffin tray.

Put in the oven until smoking, 5-10 minutes.

As quickly as you can, add 1/3 cup batter into each space in the muffin tray.

Place back in the oven for 12-15 minutes until puddings have at least doubled in size and acquired a deep golden color.

Serve immediately.
