Cornell Cookbook #18: Mae Belle's Sweet Pickles

My Nana's recipe - the apple cider vinegar makes them crisp and tangy sweet, perfect with a sandwich or ham dinner!

 

2 46 oz jars kosher dills
1 pint apple cider vinegar
5 cups sugar
1 T whole rainbow peppercorns
1 T whole allspice
8 small cloves garlic
1 T olive oil

 

Drain pickles and cut into rounds. Combine vinegar, sugar, and spices and simmer slowly for 10 minutes until clear. Do not boil. Place pickles in pint jars. Add 1 clove garlic and 1 tsp oil to each jar and cover with hot mixture. Seal and invert overnight. Store for 5 days for best results. Makes 6 pints. Enjoy!
