Cornell Cookbook #3: Hungarian Palacsinta (Crepes)

Ingredients:

  • 1 ½  C     flour
  • 3 Tbsp    sugar
  • ½ tsp      salt
  • 3             eggs
  • 2 C         milk
  • 2 Tbsp    butter (melted)

 

Instructions (be sure to follow the recipe precisely):

  1. Mix dry ingredients together.  
  2. Add eggs and milk; mix well.  Add melted butter and mix well. Batter will be thin.  
  3. Cook in nonstick pan.  (Use a 1/4 C measuring cup to ladle just the right amount of batter for one perfect size palacsinta -- about 7" diameter)  
  4. Serve w/ jam, fresh fruit, raisins + sugar-sweetened cottage cheese mixture...Yum!
